Oh bananas! -Grandma's banana bread recipe

Once again I bought too many bananas, and they turned brown before we could eat them all.  I like my bananas soft and sweet...but these are a few days past edible...even for me.  However, they shall not go to waste!  They are the perfect mushiness for Grandma's banana bread....mmmm...
 The first step is to strap on the baby!  Instead of risking putting him in the exersaucer or bouncy swing just to be interrupted by his screaming mid-baking, I will wear my baby...and wa-la!  We have a happy baby and mama gets to bake!  Plus, if he gets bored enough he just might fall asleep....or so I can hope.
Now, for the good stuff...
You will need:

1 c.       Sugar
1/2 c.    Butter
2           Eggs
1/2 tsp.  Salt
3           Nice ripe, mushy bananas
2 c.       Flour
1 tsp.    Baking Soda

(Preheat oven to 350)

DIRECTIONS

1.  Mix sugar, butter and eggs together and beat for 1 minute.  Make sure baby's hands can't reach the beaters!

2.  Add bananas 1 at a time and mix.  I think you are technically supposed to mash all the bananas before hand, and then add and "mix slowly".  But, my mixer only has a few speeds, and they all seem pretty fast! So, I plop the whole banana in and mix.  Then repeat.  It works.



3.  Mix flour, salt and soda together.  Gradually add to the above mixture.  Beat for 1 minute.



4.  Pour batter into greased bread loaf pan....I use a glass pan.  Bake at 350 for 1 hour.  Do the old toothpick trick to see if it's done.  Mine usually comes out sticky and needs another 15 minutes to bake.
Now put your feet up, relax, and let the oven do the work.  Today my baby and I took a 40 minute nap on the couch and woke to the sweet smell of banana bread! 
All I need is a cup of coffee and I'm set.  Enjoy!  Oh...and don't forget the butter!  I mean, real butter, not any of that margarine or "I can't believe it's not butter" fake butter.  Get the real stuff.  And now...Enjoy!
